Steak Teriyaki
Broccoli Chicken Stir Fry Recipe

Did you know teriyaki sauce is made of only 3
ingredients? You could always add more, like
sesame seeds, a little grated ginger and garlic. But
plain and simple, teriyaki sauce is equal parts
sugar, sweet cooking wine (mirin) and soy sauce.
In addition to the sauce, you will need steak of
your choice, button mushrooms and a selection of
bell peppers.
Step 1: Preparing the Chicken
o        1 pound chicken breasts
o        1 tbsp cornstarch
o        1 tsp soy sauce
o        1 tsp medium-dry sherry
o        2 tbsp vegetable oil
o        To prepare the chicken, slice it into bit
size pieces and place into a bowl. Mix together
the cornstarch, soy sauce, sherry and oil
together. Pour over the chicken and stir to
evenly coat. Set it aside, while you make the
sauce.
    
       
Step 2: Making the Sauce

o        1 tsp sambal oelek
o        1 1/2 to 2 tbsp oyster sauce
o        3 tbsp soy sauce
o        3 tbsp medium-dry sherry
o        To make the sauce, simply combine the sambal, oyster sauce, soy sauce and sherry. Set this aside,
while you prepare the rest of your mise en place.        

Step 3: Preparing Your Mise en Place
o        1 garlic clove
o        1 slice of ginger(about 1/4-inch)
o        3 cups broccoli
o        2 green onions
o        1/3 cup almonds
o        To prepare the rest of your mise en place, smash a clove of garlic and gather a ¼ – inch piece of
ginger. Peel the bottom stem of the broccoli and remove the florets. Cut the florets into large, even-sized
pieces. Cut the stems a bit thinner, as these take more time to cook. Next, slice the green onions on a slight
bias and set aside. You can either leave the almonds whole or roughly chop them.
            
Step 4: Stir Frying the Dish
1 to 2 tbsp vegetable oil

o                To cook the stir fry, heat a wok or large fry pan over high heat. Once hot, add the oil, then the
ginger and garlic. Let it cook for just a few seconds before discarding. The ginger and garlic are used to just
infuse the oil. Place half of the chicken into the wok and separate any pieces that are stuck together. Let it
sit for a bit before tossing. Stir fry the chicken until golden and just cooked through. Once done, remove
the chicken and set aside, while you cook the other batch. Once the second batch is done, add a touch more
oil, if needed, followed by the broccoli. Let the broccoli partially cook for about a minute. Then add the
sauce and toss to coat. If the broccoli is still quite hard and the sauce seems too thick, you can add a touch
of water to thin it out. Once the broccoli has started to soften, but is still green with a slight crunch, add
the chicken, followed by the almonds. Lastly, add the green onions and toss. Once everything has heated
through, serve immediately and enjoy.
What is mirin?
Mirin is Japanese sweet rice wine and contains sugar mixed with rice wine. You can find mirin in Asian
grocery stores and I’ve seen it sold in most regular grocery stores in the “Asian” or ethnic section. I’m
working withMitsukan to show off how simple teriyaki sauce is to make using their mirin.
Mirin is used in
many of your favorite Japanese dishes (like teriyaki!), tempura sauce, seafood dishes and sukiyaki, adding
that slightly sweet flavor to the dish. It’s gluten-free.

Prep Time: 10 minutes
Cook Time: 15 minutes

Ingredients:
FOR THE STEAK, MUSHROOMS and PEPPERS:
2 pounds flank steak (or use steak of your choice)
salt and freshly ground pepper
8 ounces button mushrooms, sliced
1 red bell pepper, julienned
1 yellow bell pepper, julienned
1 1/2 tablespoons cooking oil, separated

FOR THE TERIYAKI SAUCE
1/4 cup soy sauce
1/4 cup mirin (Japanese sweet rice wine)
2 tablespoons sugar (or more if you like a sweet teriyaki)
Directions:
To make the Easy Teriyaki Sauce, whisk all the sauce ingredients in a small sauce pan and simmer on low
for 3 minutes, until the sauce has thickened slightly.
2) Add one tablespoon of the cooking oil to a pan over medium-high heat. Sear the steak on both sides and
remove.
3) Add the remaining 1/2 tablespoon of cooking oil. Add the mushrooms and sauté for about 2 minutes
then add the peppers and cook another 2 minutes.
4) Place the steak back into the pan, reduce heat to low and add the teriyaki sauce, let simmer for 1
minute. Serve the teriyaki mushrooms and peppers on top of the steak.
